I must say sweet potatoes have to me one of my top 5 foods I eat … no joke!
Not only are the super nutrient dense, they are also insanely delicious and versatile to cook with. Sweet potatoes are also energetically a very grounding food to eat during the Fall and Winter. If you struggle with anxiety, overwhelm or flighty tendencies during the cooler seasons try incorporating these warming and nourishing complex carbs more into the diet and notice how they make you feel!
Making sweet potato fries is probably my favourite way to enjoy this glorious vegetable, which is why I was so excited to share this recipe with you guys!
EASY BAKED SWEET POTATO FRIES
- sweet potatoes
- avocado oil
- sea salt
- Preheat oven to 375
- Wash sweet potatoes well removing any dirt from the peel.
- Chop the sweet potatoes in finger length wedges and lay on a parchment covered baking sheet
- Drizzle with avocado oil and sprinkle with the spices until well coated
- Bake in the oven for 45-60 mins until crispy on the outside and tender on the inside
NOTE: I love making a big batch once a week so that I have them ready to go for easy breakfast, lunch or dinners
